Sour Cream Blueberry Coffee Cake ☕️😋
• 2 cups sugar
• 1 cup butter
• 2 eggs
• 1 cup sour cream
• 1 tsp vanilla
• 1 5/8 cups flour
• 1 tsp baking powder
• ¼ tsp salt
• 1 cup blueberries
• ½ cup brown sugar
• ½ cup pecans
• 1 tsp cinnamon
• 1 tbsp powdered sugar
Instructions
1️⃣ Preheat oven to 350°F, grease a 9-inch Bundt pan.
2️⃣ Beat sugar, butter, eggs, sour cream, and vanilla. Add flour, baking powder, and salt.
3️⃣ Fold in blueberries.
4️⃣ Layer half the batter, sprinkle half the brown sugar mixture, add remaining batter, and top with the rest of the sugar.
5️⃣ Bake for 1 hour, cool, and dust with powdered sugar.
