🌸 Festive Easter Poke Cake 🌷
Ingredients:
1 box (about 450g) white cake mix (plus water, eggs, and oil as per package instructions)
1 box (95g) instant white chocolate pudding mix
480ml cold milk
240ml heavy cream
60g powdered sugar
5ml vanilla extract
Pink, blue, green, and yellow food coloring
Instructions:
Bake the Cake:
Prepare the white cake mix according to the package instructions and bake it in a greased 9x13-inch baking pan. Allow the cake to cool for 10 minutes before moving on to the next step.
Poke the Holes:
Using the rounded end of a wooden spoon or the back of a fork, poke evenly spaced holes across the surface of the warm cake. This will help the pudding soak in beautifully.
Prepare the Pudding:
In a mixing bowl, whisk together the instant white chocolate pudding mix and cold milk until smooth. Let the mixture sit for 2 minutes to thicken slightly.
Add the Colors:
Divide the pudding evenly into four smaller bowls. Tint each portion with a different food coloring—pink, blue, green, and yellow—to create a rainbow effect.
Fill the Cake:
Spoon the colored pudding into the holes of the cake, alternating colors for a playful, festive look. Use a spatula to smooth the top gently. Cover the cake and refrigerate for 30 minutes to allow the pudding to set.
Make the Whipped Topping:
In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract using a hand mixer or whisk until stiff peaks form. This creates a light and fluffy topping that complements the cake perfectly.
Frost & Decorate:
Spread the whipped topping evenly over the chilled cake. Decorate with pastel sprinkles or swirls of additional food coloring for an extra pop of color. Slice and serve this delightful Easter treat!
