Loaded Hummus with Feta, Cucumber, Cherry Tomatoes, Olives, and Olive Oil
Ingredients:
For the Hummus:
1 can (15 oz) chickpeas, drained and rinsed
1/4 cup tahini
2 tbsp olive oil
1 clove garlic
Juice of 1 lemon
1/4 cup water
Salt to taste
For the Toppings:
1/2 cup cherry tomatoes, halved
1/2 cucumber, thinly sliced
1/4 cup Kalamata olives, pitted and halved
1/4 cup crumbled feta cheese
2 tbsp olive oil
Fresh parsley, chopped
Paprika (optional)
Instructions:
Make the Hummus: In a food processor, combine the chickpeas, tahini, olive oil, garlic, lemon juice, and water. Blend until smooth. Season with salt to taste.
Assemble the Dish: Spread the hummus onto a large serving plate or bowl, creating a slight well in the center.
Add Toppings: Arrange the cherry tomatoes, cucumber slices, Kalamata olives, and crumbled feta cheese on top of the hummus.
Drizzle: Drizzle the olive oil over the toppings.
Garnish: Sprinkle with fresh parsley and a dash of paprika, if desired.
Serve: Serve immediately with pita bread, chips, or fresh veggies.
