Salmon with Creamy Dijon Sauce
Ingredients:
4 salmon fillets
Salt and pepper to taste
2 tablespoons olive oil
2 tablespoons butter
2 cloves garlic, minced
1/4 cup dry white wine (optional)
1 cup heavy cream
2 tablespoons Dijon mustard
1 tablespoon whole grain mustard
2 tablespoons fresh dill, chopped
1 tablespoon lemon juice
Directions:
Season the salmon fillets with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add the salmon, skin side down, and cook for 4-5 minutes on each side or until cooked through. Remove from the skillet and set aside.
In the same skillet, melt the butter and sauté the garlic until fragrant, about 1 minute.
Add the white wine to deglaze the pan (if using), scraping up any brown bits from the bottom. Let it reduce by half.
Stir in the heavy cream, Dijon mustard, whole grain mustard, and lemon juice. Simmer for 3-4 minutes until the sauce thickens.
Add the fresh dill and return the salmon to the skillet. Spoon the sauce over the salmon and cook for another 2-3 minutes to heat through.
Serve immediately, garnished with additional dill and lemon slices if desired.
