4 cups vegetable broth
1 can (14 oz) coconut milk
2 cups mixed vegetables (such as bell peppers, carrots, and snap peas)
1 package (about 12 oz) dumplings (vegetable or chicken)
2 tablespoons soy sauce
1 tablespoon lime juice
Fresh cilantro, for garnish
Sliced green onions, for garnish
Directions:
In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
