• 1 duck breast
• 1/4 cup cherries
• 1 tablespoon sugar
• 1/4 cup red wine
• 1/4 cup chicken stock
• 1 teaspoon balsamic vinegar

Instructions:
1. Score the skin of the duck breast in a crisscross pattern and season with salt and pepper.
2. Heat a skillet over medium heat and place the duck breast skin-side down. Cook for 5-7 minutes until the skin is crispy and golden. Flip the duck and cook for an additional 3-4 minutes. Remove from the skillet and let it rest.
3. In the same skillet, add the sugar and cherries. Cook for 1-2 minutes until the cherries start to soften.

5. Add the chicken stock and balsamic vinegar, and simmer for 3-4 minutes until the sauce thickens slightly.
6. Stir in the butter to create a glossy sauce. Adjust seasoning with salt and pepper if needed.
7. Slice the duck breast and serve topped with the cherry sauce.
