Cheesy Cajun Chicken Pasta Skillet
#### **Ingredients:**
- 1 lb boneless, skinless chicken breast, diced
- 2 tbsp olive oil
- 1 tbsp Cajun seasoning
- 3 cloves garlic, minced
- 1 cup diced bell peppers (red & green)
- 1 cup diced tomatoes
- 2 cups heavy cream
- 1½ cups shredded cheddar or pepper jack cheese
- 12 oz penne pasta, cooked
- ½ cup chicken broth
- ½ tsp red pepper flakes (optional)
- Salt & pepper to taste
#### **Instructions:**
1. Heat olive oil in a large skillet over medium heat. Add chicken, season with Cajun seasoning, and cook until browned. Remove from skillet.
2. In the same skillet, sauté garlic and bell peppers for **2 minutes**.
3. Stir in diced tomatoes, heavy cream, cheese, chicken broth, and red pepper flakes. Simmer until thickened.
4. Add cooked pasta and chicken. Stir until everything is coated in the sauce.
5. Serve warm with extra cheese and parsley on top!
