Grilled Salmon and Avocado Salad
Ingredients:
1 piece of grilled salmon fillet
1 avocado, sliced
Handful of cherry tomatoes, halved
2 boiled eggs, sliced
1/2 cup of boiled corn
1/2 cucumber, diced
Lettuce leaves (or any green leafy veggies)
For the dressing:
2 tablespoons of olive oil
Juice of half a lemon
A pinch of salt
Some black pepper
Optional: A little mustard or grated garlic
Instructions:
Grill the salmon: Season the salmon with salt, pepper, and olive oil, then grill it in a hot pan for about 4-5 minutes on each side.
Prepare the veggies: Slice the vegetables and eggs, and arrange them on a serving plate as shown in the image.
Add the salmon: Slice the grilled salmon and place it in the center of the salad.
Make the dressing: Mix the dressing ingredients and drizzle it over the salad before serving.
