🥦 Roasted Chicken & Veggie Bowl 🍠✨
A delicious and nourishing meal with juicy roasted chicken, caramelized sweet potatoes, and crispy broccoli!
📝 Ingredients:
For the Roasted Chicken:
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 tbsp Dijon mustard (optional for extra flavor)
1 tbsp balsamic vinegar
For the Roasted Vegetables:
1 cup broccoli florets
1 cup sweet potatoes (cubed)
1/2 red onion (chopped)
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/2 tsp paprika
🍽️ Directions:
1️⃣ Preheat Oven & Prep Ingredients:
Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper.
2️⃣ Season the Chicken:
In a bowl, mix olive oil, garlic powder, smoked paprika, salt, black pepper, Dijon mustard, and balsamic vinegar.
Coat chicken breasts evenly with the mixture.
3️⃣ Roast the Vegetables:
Toss sweet potatoes, broccoli, and red onion with olive oil, salt, black pepper, garlic powder, and paprika.
Spread on one side of the baking sheet.
4️⃣ Roast Everything Together:
Place the seasoned chicken on the other side of the baking sheet.
Bake for 25-30 minutes, flipping veggies halfway through.
Ensure chicken reaches 165°F (75°C) internally.
5️⃣ Assemble & Serve:
Slice the chicken and plate it with roasted veggies.
Drizzle with extra balsamic vinegar if desired.
