🥕 Ingredients:
Bone-in, skin-on chicken thighs 🍗
Baby potatoes, halved 🥔
Bell peppers (red, yellow), chopped 🌶
Broccoli florets 🥦
Carrots, diced 🥕
Olive oil 🫒
Garlic, minced 🧄
Italian herbs or dried oregano 🌿
Salt & black pepper 🧂

Preheat oven to 400°F (200°C). In a baking dish, toss potatoes and chopped veggies with olive oil, garlic, herbs, salt, and pepper. Nestle chicken thighs on top, skin-side up. Bake uncovered until chicken is golden and cooked through, and vegetables are tender and caramelized.
Tip: For extra crisp skin, broil for the last 5 minutes of baking!
