GARLIC CHICKEN BITES WITH CAJUN SPAGHETTI PASTA
Ingredients:
1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
12 oz spaghetti pasta
3 tablespoons butter
1 tablespoon olive oil
1 tablespoon Cajun seasoning
1 teaspoon smoked paprika
½ teaspoon garlic powder
4 cloves garlic, minced
1½ cups heavy cream
¾ cup grated Parmesan cheese
½ cup reserved pasta water (optional, to thin sauce)
Salt and black pepper to taste
Fresh parsley or green onions for garnish
Directions:
Boil spaghetti in salted water until al dente. Reserve ½ cup of the pasta water, then drain and set aside.
In a large skillet, heat butter and olive oil over medium heat.
Season chicken bites with Cajun seasoning, paprika, garlic powder, salt, and pepper.
Cook chicken in the skillet until golden and cooked through, about 5–6 minutes. Remove and set aside.
In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
Pour in heavy cream and bring to a low simmer. Stir in Parmesan cheese until melted and smooth.
Add cooked spaghetti and toss to coat. If the sauce is too thick, add reserved pasta water gradually.
Return chicken to the skillet and stir to combine.
Serve hot, garnished with parsley or green onions.
