LEMON-LIME CHERRY PISTACHIO CHEESECAKE
Ingredients
For the Crust:
1½ cups graham cracker crumbs
¼ cup chopped pistachios
¼ cup melted butter
2 tbsp brown sugar
For the Cheesecake Filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 tbsp all-purpose flour
3 large eggs
½ cup sour cream
¼ cup fresh lemon juice
1 tbsp lime zest
½ tsp vanilla extract
¾ cup fresh or frozen pitted cherries (chopped or whole)
Topping:
½ cup fresh cherries
¼ cup chopped pistachios
Lemon zest (optional)
Cherry syrup or glaze (optional)

Instructions
1. Make the Crust:
1. Preheat oven to 325°F (163°C).
2. Mix graham crumbs, pistachios, melted butter, and sugar.
3. Press into the bottom of a springform pan. Bake for 8–10 minutes. Let cool.
2. Prepare the Cheesecake:
1. Beat cream cheese and sugar until smooth. Add flour and mix.
2. Add eggs one at a time, beating lightly.
3. Mix in sour cream, lemon juice, lime zest, and vanilla.
4. Fold in cherries gently.
5. Pour filling over crust and smooth the top.
3. Bake:
1. Bake at 325°F for 50–60 minutes or until the edges are set and center jiggles slightly.
2. Turn off oven, crack the door open, and let cheesecake rest for 1 hour.
3. Chill in fridge for at least 6 hours or overnight.
4. Decorate:
Top with fresh cherries, chopped pistachios, lemon zest, and cherry syrup before serving.
