Olive & Sausage Spaghetti in Olive Oil
🍝 Simple, rustic, and packed with bold Mediterranean flavor — perfect for a cozy weeknight dinner.
🍴 Ingredients:
8 oz spaghetti, cooked al dente
2 Italian sausages (sweet or spicy), casings removed
2 tbsp extra virgin olive oil
½ cup whole green olives, pitted
2 garlic cloves, minced
1 tbsp chopped fresh parsley
Salt & cracked black pepper to taste
Optional: pinch of red pepper flakes
Parmesan (for serving)
🔥 Instructions:
Cook the Sausage:
In a skillet over medium heat, add a drizzle of olive oil.
Add crumbled sausage and cook until browned and crispy, breaking it up with a spoon.
Add Flavor Base:
Stir in garlic and cook until fragrant (about 30 seconds).
Toss in the olives and a pinch of red pepper flakes (if using). Sauté for another minute.
Toss Pasta:
Add the cooked spaghetti to the pan.
Drizzle in the rest of the olive oil and toss everything together until noodles glisten and are evenly coated.
