Ingredients:
1/2 cup (1 stick) unsalted butter
3/4 cup granulated sugar
1/4 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup mini chocolate chips (optional, plus extra for topping)
Instructions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease a 24-cup mini muffin pan or line with mini paper liners.
Melt Butter & Mix:
In a microwave-safe bowl, melt butter. Stir in granulated sugar, brown sugar, and vanilla until combined. Beat in the eggs one at a time.
Add Dry Ingredients:
Sift in cocoa powder, flour, salt, and baking powder. Mix just until combined—do not overmix. Fold in mini chocolate chips, if using.
Spoon Into Pan:
Scoop the batter into the prepared mini muffin cups, filling each about 3/4 full. Sprinkle extra mini chocolate chips on top for added texture and appearance.
Bake:
Bake for 12–15 minutes, or until the centers are just set and a toothpick inserted comes out with moist crumbs (not wet batter).
Cool & Serve:
Let cool in the pan for 5–10 minutes before transferring to a wire rack to cool completely.
