Fried Skillet Potatoes & Sausage
A simple budget-friendly recipe for a skillet meal with sausage, onions, peppers and southern-style fried potatoes.
~~INGREDIENTS~~
1 lb. ground sausage, cooked and drained, I prefer spicy
1 medium onion, chopped
1 small-bell pepper, chopped
5-6 russet potatoes
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dried parsley
Vegetable oil
~~INSTRUCTIONS~~
Drizzle a little vegetable oil in a large skillet (nonstick is best if you have it) then sauté sausage until well browned. Take upon paper towels to drain.
Meanwhile, peel potatoes then cut into cubes and wash them real good.
Rinse the skillet out and over medium high heat, add 4 tablespoons vegetable oil, the potatoes, onions and peppers. Season with salt, pepper and dried parsley. Cover with a lid and stir occasionally. Cook until potatoes are softened and about 10 minutes, Add the sausage back to the potatoes and stir to combine. Don’t stir the potatoes too much or they will fall apart.
Serve immediately.
