Ingredients:

1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 egg yolk
2 cups all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
1 cup fresh strawberries, chopped into small pieces
For the Cream Cheese Filling:
6 oz cream cheese, softened
1/3 cup powdered sugar
Instructions:
1. Prepare the Cream Cheese Filling:
In a small bowl, mix the softened cream cheese and powdered sugar until smooth and creamy.
Scoop out small teaspoon-sized mounds of filling onto a parchment-lined tray.
Freeze for 30 minutes, or until firm.
2. Make the Cookie Dough:
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the egg and egg yolk, mixing until smooth.
In a separate bowl, whisk together the flour, salt, and baking soda.
Gradually mix the dry ingredients into the wet ingredients until just combined.
Gently fold in the chopped fresh strawberries.
3. Assemble the Cookies:
Scoop about 1 1/2 tablespoons of cookie dough and flatten it slightly in your hand.
Place a frozen ball of cream cheese filling in the center, then cover it with another small portion of dough.
Seal the edges well and roll into a ball. Place onto a parchment-lined baking sheet, spacing them 2 inches apart.
Repeat with remaining dough and filling.
4. Bake:
Preheat your oven to 350Β°F (175Β°C).
Bake the cookies for 11β13 minutes, or until the edges are set and the centers look just slightly underbaked.
Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
