Little Apple Cakes

Ingredients:

2 apples, peeled, cored, and finely chopped

125g (1/2 cup) butter, softened

1/2 cup caster sugar

2 eggs

1 tsp vanilla extract

1 1/4 cups self-raising flour

1/2 tsp ground cinnamon

1/4 cup milk

Extra cinnamon sugar, for topping (optional)

Instructions:

Preheat oven to 180°C (160°C fan-forced). Grease and line a 12-hole muffin tin with paper cases.

Cream butter and sugar in a bowl until light and fluffy.

Add eggs one at a time, beating well after each addition. Stir in vanilla.

Sift flour and cinnamon into the bowl. Add milk and mix gently until just combined.

Fold in chopped apples.

Spoon mixture into muffin cases, filling about 3/4 full.

Sprinkle tops with a little cinnamon sugar if desired.

Bake for 20–25 minutes or until golden and a skewer inserted into the center comes out clean.

Cool slightly in pan, then transfer to a wire rack. Serve warm or at room temperature.
