Lemon Dill Salmon with Broccoli Penne
Creamy Broccoli Penne with Flaky Lemon Dill Salmon
Ingredients:
12 oz penne pasta
2 salmon fillets (approx. 6 oz each)
2 cups broccoli florets
2 tablespoons olive oil
2 garlic cloves, minced
Zest and juice of 1 lemon
1 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)
1/2 cup plain Greek yogurt or dairy-free alternative
Salt and black pepper to taste
Optional: 1/4 cup grated Parmesan or nutritional yeast
Directions:
Cook penne pasta in salted boiling water according to package instructions. Add broccoli florets in the last 3 minutes of cooking. Drain and set aside.
Season salmon fillets with salt, pepper, lemon zest, and dill.
Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the salmon for 4-5 minutes per side, or until cooked through and flaky. Remove and gently flake into chunks.
In the same skillet, add remaining olive oil and sauté minced garlic for 1 minute.
Stir in Greek yogurt, lemon juice, and a splash of pasta water to loosen the sauce.
Add the drained penne and broccoli to the skillet, tossing to coat. Fold in salmon chunks gently.
Sprinkle with Parmesan or nutritional yeast if desired. Serve warm and enjoy!
