Mint Chocolate Fudge Cheesecake Cake
Ingredients:
For the chocolate cake layer:
1 box chocolate cake mix
1/2 cup vegetable oil
3 large eggs
1 cup water
For the cheesecake layer:
2 packages (8 oz each) cream cheese, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 teaspoon mint extract
1/4 cup sour cream
For the fudge layer:
1 cup semi-sweet chocolate chips
1/2 cup heavy cream
1/4 teaspoon vanilla extract
For garnish:
Crushed mint chocolate candies or mint chocolate chips
Fresh mint leaves (optional)
Directions:
Preheat oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
Prepare the chocolate cake mix according to the package instructions. Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick comes out clean. Allow the cake to cool completely.
While the cake is cooling, prepare the cheesecake layer. In a large mixing bowl, beat the softened cream cheese and sugar together until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla and mint extract, followed by sour cream.
Pour the cheesecake batter over the cooled cake layer and bake for 35-40 minutes, or until the cheesecake is set. Turn off the oven and allow the cheesecake to cool inside the oven with the door slightly ajar for 1 hour. Then, refrigerate for at least 3 hours or overnight.
Prepare the fudge layer by melting the chocolate chips and heavy cream together in a microwave-safe bowl, stirring every 30 seconds until fully melted and smooth. Stir in vanilla extract.
Pour the fudge layer over the chilled cheesecake and spread it evenly. Return the cake to the refrigerator for at least 30 minutes to allow the fudge to set.
Before serving, garnish with crushed mint chocolate candies or mint chocolate chips and fresh mint leaves if desired.
