Sweet Italian Taralli Cookies with Lemon Glaze
Ingredients

4 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup vegetable oil

4 large eggs

1 tablespoon vanilla extract

Zest of 1 lemon

Juice of 1 lemon

1/4 cup milk (as needed for dough consistency)

For the Glaze:

2 cups powdered sugar

1–2 tablespoons lemon juice

Instructions
Preheat the Oven
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Mix Wet Ingredients
In a separate bowl, beat the vegetable oil, eggs, vanilla extract, lemon zest, and lemon juice until smooth.

Form the Dough
Gradually mix the wet ingredients into the dry ingredients until a soft dough forms.
If the dough feels too dry, add milk gradually until it becomes pliable but not sticky.

Shape the Cookies
Divide the dough into small pieces. Roll each into a 6-inch rope and form into circles, tucking the ends underneath.

Bake
Place the shaped dough on the prepared baking sheet. Bake for 12–15 minutes, or until lightly golden on the bottom.

Prepare the Glaze
While the cookies cool, whisk together the powdered sugar and lemon juice to make a smooth glaze.

Glaze the Cookies
Dip each cooled cookie into the glaze. Place on a wire rack and allow the glaze to set.
