Lemon Garlic Shrimp over Palmini Noodles

Ingredients:

1 pound large shrimp, peeled and deveined
1 (12 ounce) package Palmini noodles
4 tablespoons olive oil
4 cloves garlic, minced
1/4 cup lemon juice (about 1 large lemon)
2 tablespoons lemon zest (about 1 large lemon)
1/4 cup chopped fresh parsley
1/4 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
2 tablespoons butter (optional, for richness)

Instructions:

1. Cook the Palmini noodles according to package directions. Usually, this involves rinsing them thoroughly under cold water and then briefly cooking them in boiling water for about 1 minute, or until desired tenderness is reached. Drain well and set aside.
2. While the noodles are cooking, prepare the shrimp. Pat the shrimp dry with paper towels. Season generously with salt and pepper.
3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove the shrimp from the skillet and set aside.
4. In the same skillet, add the remaining 2 tablespoons of olive oil and the minced garlic. Cook for about 1 minute, or until fragrant, being careful not to burn the garlic.
