Ingredients:
- 1 tablespoon olive oil for the steak
- 2 tablespoons butter for the steak
- 1 lb sirloin or ribeye steak, cut into bite-sized pieces
- 1 cup heavy cream
- 4 cloves garlic, minced (2 for the steak, 2 for the sauce)
- 1 tablespoon olive oil for the sauce
- 12 oz fettuccine or pasta of choice
- 1 cup grated Parmesan cheese
- Salt and black pepper, to taste
- 2 tablespoons fresh parsley, chopped for garnish
- 1 teaspoon Italian seasoning
- Reserved pasta water as needed
Instructions:
1. Start by cooking your pasta. In a large pot, bring salted water to a boil and cook the fettuccine according to package instructions until al dente. Once ready, drain the pasta, but be sure to reserve about 1/2 cup of the pasta water for later.
2. In a large skillet, combine 2 tablespoons of butter and 1 tablespoon of olive oil over medium-high heat. Season the bite-sized steak pieces generously with salt and black pepper, then add them to the skillet. Sear the steak for 2-3 minutes on each side until a beautiful brown crust forms. Once seared, remove the steak from the skillet and set it aside.
3. Reduce the heat to medium and add the minced garlic to the same skillet. Sauté for 1-2 minutes until the garlic is fragrant. Return the cooked steak to the skillet, tossing it in the garlic butter mixture. Remove from heat and set aside.
4. In a separate saucepan, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat, then add the remaining minced garlic. Sauté for about a minute until fragrant, then pour in the heavy cream, bringing it to a gentle simmer.
5. Gradually whisk in the grated Parmesan cheese along with the Italian seasoning, stirring continuously until the sauce becomes smooth and creamy. Taste and adjust seasoning with salt and black pepper as desired.
