Chicken and dumplings in the crockpot. Delicious!
3 chicken breasts
12 oz bag frozen peas and carrots
1.5 cups frozen corn
1 stalk of celery (meaning just one "stick" of the bundle lol)
1/2 an onion, diced
2 cans cream of chicken
2.5 cups chicken broth/stock
1 tsp garlic powder
1 tsp poultry seasoning
1 tsp salt
1/2 tsp pepper
1 can of biscuits (10 biscuits)
Add the 3 chicken breasts to the bottom of the crockpot
Add all of the veggies (carrots, peas, corn, onion, celery)
Add all of the seasonings (garlic powder, poultry seasoning, s&p)
Add the cream of chicken
Add the chicken broth/stock
Cook on low for 6 hours or high for 3 hours
Pull out the chicken breasts, shred the meat, and add back to the crockpot. Cut each biscuit into quarters and add to the crock pot
Cook on high for 1.5 hours (stir a few times, the biscuits will thicken the mixture as they cook)
*I had boiled a chicken a few days prior and used the pot water to make my own chicken broth. I do think it made a difference using homemade vs. canned, it was SO good and rich!
**You may want to add two cans of biscuits, just depends on how many dumplings you like
