Ingredients:
8 oz cream cheese, softened
1/2 cup marshmallow fluff (or homemade marshmallow creme)
1/4 cup powdered sugar, sifted
1 tsp vanilla extract
Zest of 1 lemon (about 1 tsp)
1/2 cup whipped topping (such as Cool Whip), thawed
3–4 drops of gel food coloring (pastel pink, yellow, or green work well)
Assorted dippers: graham crackers, pretzels, fruit slices, or mini cookies
Instructions:
Prepare the Base: In a medium mixing bowl, beat the softened cream cheese until smooth using a hand mixer or whisk. Add the marshmallow fluff and powdered sugar, blending until fully incorporated. Mix in the vanilla extract and lemon zest for a burst of freshness.
Add Lightness: Gently fold in the whipped topping with a spatula, being careful not to deflate the mixture. This step ensures the dip stays light and airy.
Color Your Creation: Divide the dip into two smaller bowls if you’d like multiple colors, or keep it all in one bowl for a single shade. Add 3–4 drops of gel food coloring to each portion and stir gently to achieve your desired pastel hue.
Chill and Set: Transfer the dip to a serving bowl or divide it among small ramekins for individual servings. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
