ΒΌ red onion, thinly sliced

ΒΌ avocado, diced

ΒΌ cup pomegranate seeds

6–8 Kalamata olives

Optional: peach slices or yellow tomatoes for a touch of sweetness

Simple Dressing:

1 tbsp olive oil

1 tbsp lemon juice

Salt & pepper, to taste
