Pineapple Casserole 🧀🍍

Ingredients:

1 can (20 oz) pineapple chunks, drained
1 can (20 oz) crushed pineapple, drained
1 cup granulated sugar
6 tbsp all-purpose flour
2 cups shredded cheddar cheese
1/2 cup butter, melted
1 sleeve Ritz crackers, crushed

Directions:

Preheat oven to 350°F (175°C). Lightly grease a 9x9-inch or similar-sized baking dish.

In a large mixing bowl, combine sugar and flour. Stir in both the pineapple chunks and crushed pineapple until evenly coated.

Add in shredded cheddar cheese and gently fold to mix.

Pour the mixture into the prepared baking dish and spread evenly.

In a separate bowl, mix the crushed Ritz crackers with melted butter until fully coated.

Sprinkle the buttery cracker topping evenly over the pineapple-cheese mixture.

Bake for 25–30 minutes, or until the top is golden brown and the casserole is bubbly.

Let cool for 5–10 minutes before serving warm.
