Captain D’s Batter Dipped Fish Recipe
Ingredients:
1 pound white fish fillets (such as cod or haddock)
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1 cup cold sparkling water
Oil for frying
Directions:
Begin by heating oil in a deep fryer or a large pot to 350°F (175°C). Ensure the oil is deep enough to fully submerge the fish fillets.
In a mixing bowl, combine the flour, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and free of lumps.
Once the oil is hot, dip each fish fillet into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil, frying in batches to avoid overcrowding.
Fry the fish for about 4-5 minutes or until golden brown and crispy, turning occasionally for even cooking.
Using a slotted spoon, remove the fish from the oil and place it on a plate lined with paper towels to drain excess oil.
Serve the batter-dipped fish hot, accompanied by your favorite dipping sauce and sides.
