Glow-in-the-Dark Moonlit Cake 🍰✨

Ingredients:

2 ½ cups all-purpose flour
1 ½ tsp baking powder
½ tsp baking soda
¼ tsp salt
1 cup unsalted butter, softened
1 ½ cups granulated sugar
3 large eggs
1 tsp vanilla extract
1 cup milk
2 tsp lemon zest
1 tbsp lemon juice
3 tbsp black light-reactive food coloring (or neon food coloring)

For the Frosting:
½ cup heavy cream
1 cup powdered sugar
2 tsp black light-reactive food coloring (for frosting)

Optional Garnish:
Edible glow-in-the-dark powder (safe for consumption)

Directions:

Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, cream butter and sugar until light and fluffy.

Add eggs one at a time, beating well after each addition. Stir in vanilla, lemon zest, and lemon juice.

Alternate adding flour mixture and milk to the butter mixture, beginning and ending with flour.

Add black light-reactive or neon food coloring and mix until the color is evenly distributed.

Divide batter evenly between prepared pans and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.

For the frosting, whip the heavy cream until soft peaks form. Slowly add powdered sugar and food coloring and beat until stiff peaks form.

Frost the cooled cake and decorate with edible glow-in-the-dark powder for a dazzling moonlit effect.
