- 2 lbs beef chuck, diced
- 2 tablespoons olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 4 dried ancho chilies, with stems and seeds removed

- 2 cups beef broth
- 1 teaspoon cumin
- 1 teaspoon oregano
