🥩 Stewing Beef: 800g, cut into chunks
🧅 Onion: 1 large, finely chopped
🧄 Garlic: 2 cloves, minced
🥕 Carrots: 2 medium, diced
🌱 Thyme: 1 tsp (or 2 sprigs fresh)
🌿 Bay Leaf: 1
🌾 Plain Flour: 2 tbsp (for coating the beef)
🥄 Tomato Purée: 1 tbsp
🍵 Beef Stock: 500ml
🧂 Salt and Pepper: To taste
🛢️ Sunflower Oil: 2 tbsp
For the Pastry:
🥧 Puff Pastry: 1 sheet (ready-made or homemade)
🥚 Egg Yolk: 1, beaten (for glazing)
Method:
🔥 Prepare the Beef:
Toss the beef chunks in plain flour, seasoned with salt and pepper.
🍳 Sear the Meat:
Heat the oil in a large casserole dish over medium-high heat. Brown the beef in batches, then set aside.
🥕 Cook the Veggies:
Add the onion, garlic, and carrots to the same pot. Cook for 5 minutes until softened. Stir in the tomato purée and cook for another 2 minutes.
🍲 Make the Gravy:
Return the beef to the pot. Add the thyme, bay leaf, and beef stock. Bring to a simmer, then reduce the heat to low. Cover and cook gently for 1.5–2 hours, or until the beef is tender and the sauce has thickened. Let it cool completely before assembling the pie.
🥧 Assemble the Pie:
Preheat your oven to 200°C (fan 180°C). Transfer the cooled beef mixture into a pie dish. Roll out the puff pastry and cover the pie, trimming any excess. Seal the edges and make a small slit in the middle to release steam.
🥚 Glaze and Bake:
Brush the pastry with the beaten egg yolk for a golden finish. Bake for 25–30 minutes, or until the pastry is puffed and golden.
