Spicy Cajun Steak with Creamy Pasta Skillet

Ingredients:

1 lb sirloin steak, about 1 inch thick
2 tbsp Cajun seasoning
1 tbsp olive oil
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 yellow onion, thinly sliced
2 cloves garlic, minced
1 lb pasta (penne or rotini work great!)
4 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 tbsp tomato paste (for color and flavor)
1/2 tsp smoked paprika (for color and a smoky kick)
Salt and pepper to taste

Directions:

Season the steak: Rub the sirloin steak with Cajun seasoning on both sides. Season with salt and pepper to taste.
Cook the steak: Heat olive oil in a large skillet over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes per side until cooked to your desired level of doneness. Remove from the skillet and let it rest before slicing it thinly against the grain.
Sauté the vegetables: In the same skillet, add the sliced bell peppers, onion, and garlic. Cook for about 3-4 minutes until the vegetables are tender and slightly caramelized. Add in the tomato paste and smoked paprika, stirring well to incorporate.
Cook the pasta: While the vegetables are cooking, bring a pot of salted water to a boil. Add the pasta and cook according to package instructions. Drain and set aside, reserving 1 cup of pasta water.
Make the creamy sauce: In the skillet with the vegetables, add the chicken broth and bring to a simmer. Stir in the heavy cream, Parmesan cheese, and the reserved pasta water. Allow the sauce to simmer and thicken for about 3-4 minutes.
Combine everything: Add the cooked pasta to the skillet, tossing to coat in the creamy sauce. Stir in the sliced steak and cook for an additional 1-2 minutes until everything is well combined and heated through.
Garnish and serve: Sprinkle the pasta with fresh parsley and additional Parmesan cheese if desired. Serve hot and enjoy your creamy, spicy Cajun steak pasta!
