Pumpkin Spice Gooey Cake
Ingredients:
- 1 cup pumpkin puree
- 1 cup brown sugar, packed
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup cream cheese, softened
- 1/4 cup granulated sugar
Directions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9x9 inch baking dish.
2. In a large bowl, combine pumpkin puree, brown sugar, melted butter, eggs, and vanilla extract. Mix until smooth.
3. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
5. Pour half of the batter into the prepared baking dish and spread evenly.
6. In a small bowl, beat the cream cheese and granulated sugar until smooth. Drop spoonfuls of the cream cheese mixture evenly over the batter in the dish.
7. Pour the remaining batter over the cream cheese layer, spreading gently to cover.
8. Bake for 40-45 minutes or until the top is set and a toothpick inserted near the center comes out with moist crumbs.
9. Allow the cake to cool before cutting into squares and serving.
