Million Dollar Chicken Casserole
Ingredients:
3 cups cooked shredded chicken (rotisserie chicken works great)
1 package (8 oz) cream cheese, softened
1/2 cup sour cream
1 can (10.5 oz) cream of chicken soup
1 cup shredded mozzarella or Monterey Jack cheese
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1/2 tsp onion powder
Salt & pepper to taste
1 sleeve Ritz crackers (about 30), crushed
1/4 cup melted butter
Optional: chopped parsley or green onions for garnish
Instructions:
Preheat oven to 350°F (175°C).
In a large bowl, combine cream cheese, sour cream, cream of chicken soup, shredded mozzarella, Parmesan, garlic powder, onion powder, salt, and pepper. Mix until creamy and smooth.
Fold in shredded chicken, mixing well to coat it evenly.
Spread mixture into a greased 9x13-inch baking dish.
In a separate bowl, combine crushed Ritz crackers and melted butter, then sprinkle evenly over the casserole.
Bake uncovered for 30–35 minutes, or until hot and bubbly and the topping is golden brown.
Garnish with chopped parsley or green onions if desired. Let rest 5 minutes before serving.
