Apple Cider Beef Stew

Ingredients:

- 2 pounds beef stew meat, cut into 1-inch cubes
- 2 tablespoons canola oil
- 3 cups apple cider or juice
- 1 can (14-1/2 ounces) reduced-sodium beef broth
- 2 tablespoons cider vinegar
- 1-1/2 teaspoons salt
- 1/4 to 1/2 teaspoon dried thyme
- 1/4 teaspoon pepper
- 3 medium potatoes, peeled and cubed
- 4 medium carrots, cut into 3/4-inch pieces
- 3 celery ribs, cut into 3/4-inch pieces
- 2 medium onions, cut into wedges
- 1/4 cup all-purpose flour
- 1/4 cup water
- Fresh thyme sprigs, optional

Directions:

1. Heat canola oil in a large pot or Dutch oven over medium-high heat. Add beef stew meat and brown on all sides, about 5-7 minutes. Remove meat and set aside.
2. Pour apple cider, beef broth, and cider vinegar into the pot. Stir in salt, dried thyme, and pepper.
3. Return browned beef to the pot and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 1 hour.
4. Add potatoes, carrots, celery, and onions to the pot. Cover and continue to simmer for another 45 minutes, or until vegetables and beef are tender.

6. Cook uncovered for an additional 10 minutes, stirring occasionally. Adjust seasoning as needed.
7. Garnish with fresh thyme sprigs if desired before serving.
