Blueberry Zucchini Bread 🍞

📋 Ingredients
- 2 1/2 cups sugar
- 4 eggs
- 1 1/4 cups corn oil
- 1 Tbls vanilla
- 3 1/2 cups flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp nutmeg
- 2 tsp cinnamon
- 4 cups Zucchini (seeds removed and shredded)
- 4 cups fresh blueberries (washed and towel dry)
- 1 1/2 cups walnuts (Optional)
📝 Instructions
1. In a large bowl, combine all ingredients except for the Zucchini, blueberries, and walnuts.
2. Beat with an electric mixer just until blended.
3. Fold in the Zucchini, blueberries, and walnuts.
4. Grease 4 medium-sized bread pans and evenly distribute the batter among them.
5. Bake at 350°F for 1 hour.
6. Allow the bread to cool completely before wrapping.
7. For freezing, wrap the bread in wax paper, then tinfoil, followed by either plastic wrap or a gallon freezer bag.
8. The bread can be frozen for up to 6 months and will remain fresh.
