Potato Pancakes with Savory Beef and Cheese

Ingredients:

4 large potatoes, peeled and grated
1/2 medium onion, finely chopped
1 large egg
1/4 cup all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1/2 cup shredded cheddar cheese
1/2 pound ground beef
1 tablespoon olive oil (for cooking)
1/2 teaspoon dried thyme
1/2 teaspoon paprika
1/2 cup sour cream (for serving)
Directions:

Start by placing the grated potatoes in a clean kitchen towel or cheesecloth and squeezing out excess moisture.

In a large mixing bowl, combine the grated potatoes, chopped onion, egg, flour, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are fully incorporated.

Fold in the shredded cheddar cheese for added flavor and texture.

Heat a non-stick skillet over medium heat and add a little olive oil.

Scoop spoonfuls of the potato mixture into the skillet, pressing them down gently to form small, flat pancakes. Cook for about 3-4 minutes on each side until golden brown and crispy. Remove from the skillet and set aside on a paper towel-lined plate.

In the same skillet, add the ground beef. Cook over medium heat, breaking it up into crumbles with a spoon. Season with salt, pepper, dried thyme, and paprika. Cook until browned and cooked through, about 5-7 minutes.

To serve, place the crispy potato pancakes on a plate, top with the savory beef mixture, and garnish with a dollop of sour cream.
