Ingredients
For the Shortbread Dough:
1 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
A pinch of salt
For the Caramel Filling:
1 can (14 oz) sweetened condensed milk
1/2 cup granulated sugar
1/4 cup unsalted butter, cubed
Pinch of salt
For the Chocolate Drizzle:
1 cup milk chocolate chips
1 tablespoon heavy cream
Instructions
Step 1: Prepare the Shortbread Dough
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the vanilla extract. Gradually add the flour and salt, mixing just until the dough comes together. Be careful not to overmix.
Roll the dough into 1-inch balls and place them on the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with the palm of your hand or the bottom of a glass dipped in sugar to prevent sticking.
Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let the cookies cool completely on the baking sheets.
Step 2: Make the Caramel Filling
In a medium saucepan over medium heat, combine the sweetened condensed milk, granulated sugar, butter, and salt. Stir continuously for about 10-12 minutes, or until the mixture thickens and turns a deep golden color. Once ready, remove from heat and allow the caramel to cool slightly.
Using a spoon or piping bag, dollop or pipe a small amount of caramel onto the center of half of the cooled cookies. Top each with another cookie, pressing gently to seal. Set aside while you prepare the chocolate drizzle.
Step 3: Create the Chocolate Drizzle
In a microwave-safe bowl, combine the milk chocolate chips and heavy cream. Microwave in 30-second intervals, stirring between each, until smooth and fully melted. If needed, stir in an additional teaspoon of cream for thinner consistency.
Drizzle the melted chocolate over the assembled cookies in a zigzag pattern using a spoon or piping bag. Allow the chocolate to set at room temperature or speed up the process by refrigerating for 10-15 minutes.
Step 4: Serve and Enjoy
Store the cookies in an airtight container at room temperature for up to 5 days. These Twix-inspired creations are best enjoyed fresh, so share them with friends or family for maximum enjoyment!
