Ramen Noodle Salad 🥗

Ingredients:

2 packs (3 oz each) ramen noodles, crushed (discard seasoning packets)
4 cups coleslaw mix (shredded cabbage & carrots)
1/2 cup sliced almonds
1/2 cup sunflower seeds
3 green onions, chopped
1/2 cup dried cranberries (optional)

Dressing:

1/4 cup olive oil
3 tbsp rice vinegar
2 tbsp honey or sugar
1 tbsp soy sauce
1 tsp sesame oil
1/2 tsp garlic powder
1/2 tsp black pepper

Directions:

1️⃣ In a large bowl, combine coleslaw mix, crushed ramen noodles, almonds, sunflower seeds, green onions, and cranberries (if using).
2️⃣ In a small bowl, whisk together olive oil, rice vinegar, honey, soy sauce, sesame oil, garlic powder, and black pepper.
3️⃣ Pour the dressing over the salad and toss well to coat.
4️⃣ Let sit for at least 15 minutes to allow the flavors to blend.
5️⃣ Serve chilled or at room temperature and enjoy!
