Avocado Chicken Salad Lettuce Wraps
Ingredients:
2 cups cooked chicken breast, shredded
1 large avocado, mashed
1/4 cup Greek yogurt
1 tablespoon fresh lime juice
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup red onion, finely chopped
1/4 cup celery, diced
1/4 cup cherry tomatoes, diced
2 tablespoons fresh cilantro, chopped
8 large lettuce leaves (romaine or butter lettuce)
Directions:
In a large mixing bowl, mash the avocado until smooth.
Add Greek yogurt, lime juice, garlic powder, salt, and black pepper. Mix well.
Fold in the shredded chicken, red onion, celery, cherry tomatoes, and cilantro. Stir until evenly combined.
Lay out the lettuce leaves and spoon the chicken salad mixture into the center of each leaf.
Gently fold or roll the lettuce leaves around the filling.
Serve immediately or chill for 15 minutes for enhanced flavor. Enjoy!
