Cheesy Burrata Crostini with Prosciutto & Peaches
**Ingredients:
- 1 loaf of sourdough or French baguette, sliced
- 1/3 cup grated Parmesan cheese
- 1/3 cup grated Pecorino cheese
- 1 clove garlic, grated
- 2 tablespoons fresh thyme leaves
- 2 tablespoons melted butter
- 4 ounces prosciutto
- 8 ounces burrata cheese, at room temperature
- 2 peaches, sliced
- Hot honey (for drizzling)
- Fresh basil leaves
**Directions:
1. Preheat your oven to 375°F (190°C).
2. Arrange the sliced bread on a baking sheet and brush both sides with melted butter.
3. In a small bowl, mix together the Parmesan, Pecorino, and grated garlic. Sprinkle the cheese mixture over the bread slices.
4. Toast the bread in the oven for about 10-12 minutes, or until golden and crispy.
5. While the bread is toasting, layer the prosciutto over a plate, tear it into pieces, and set aside.
6. Once the crostini is done, remove from the oven and let it cool slightly.
7. Place a piece of burrata cheese on top of each crostini.
8. Arrange the sliced peaches over the burrata and top with fresh thyme leaves.
9. Drizzle hot honey over the crostini and garnish with fresh basil leaves.
10. Serve immediately and enjoy!
