Creamy Chicken with Mushrooms on Mashed Potatoes & Spinach 🍄
Ingredients:
2 boneless, skinless chicken breasts
1 tsp salt
½ tsp black pepper
1 tsp Italian seasoning
2 tbsp olive oil
2 tbsp butter
1 cup mushrooms, sliced
2 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
½ cup Parmesan cheese, grated
4 cups fresh spinach
For Mashed Potatoes:
4 large potatoes, peeled and cubed
¼ cup butter
½ cup milk
Salt & pepper to taste
Directions:
1️⃣ Prepare Mashed Potatoes: Boil potatoes in salted water until fork-tender. Drain, then mash with butter, milk, salt, and pepper. Set aside.
2️⃣ Cook Chicken: Season chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a pan over medium heat. Cook chicken for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
3️⃣ Make the Sauce: In the same pan, melt butter and sauté mushrooms for 3 minutes. Add garlic and cook for 30 seconds.
4️⃣ Pour in heavy cream and chicken broth, stirring well. Add Parmesan cheese and stir until sauce thickens.
5️⃣ Return the chicken to the pan, coating it with the creamy sauce. Simmer for 2 minutes.
6️⃣ Sauté Spinach: In a separate pan, sauté spinach with a little olive oil until wilted.
7️⃣ Assemble the Dish: Place mashed potatoes on a plate, top with sautéed spinach, and add creamy chicken with mushrooms. Spoon extra sauce over the top. Enjoy! 😋
