- ΒΌ teaspoon (1.25 ml) red pepper flakes (optional)
- 1 cup (180 g) red lentils, rinsed
- 4 cups (946 ml) vegetable broth
- 1 cup (240 ml) water
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh cilantro or parsley, chopped (for garnish)

directions:
1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
2. Add the minced garlic and grated ginger and cook for another minute until fragrant.
3. Stir in the ground turmeric, cumin powder, and red pepper flakes (if using). Cook for 30 seconds more.
4. Add the rinsed red lentils, vegetable broth, and water. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender and have broken down.
