Carrot Cake Baked Oatmeal Bars
Ingredients:
2 cups rolled oats
1 ½ tsp cinnamon
½ tsp nutmeg
1 tsp baking powder
¼ tsp salt
1 cup grated carrots
¼ cup chopped walnuts (optional)
¼ cup raisins (optional)
2 eggs
1 cup milk
¼ cup maple syrup or honey
1 tsp vanilla extract
2 tbsp melted coconut oil or butter
Directions:
1. Preheat oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper.
2. Mix dry ingredients: In a bowl, combine oats, cinnamon, nutmeg, baking powder, and salt. Stir in grated carrots, walnuts, and raisins.
3. Mix wet ingredients: In another bowl, whisk eggs, milk, maple syrup, vanilla, and melted coconut oil.
4. Combine: Pour wet ingredients into the dry and mix until well combined.
5. Bake: Transfer the mixture to the prepared baking dish and spread evenly. Bake for 30-35 minutes until set and golden brown.
6. Cool and serve: Let cool before slicing into bars. Enjoy.
