Tiramisu Cupcakes
Ingredients:
For the Cupcakes:
1 ½ cups all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup whole milk
¼ cup strong brewed espresso or coffee
For the Filling:
½ cup mascarpone cheese
2 tbsp powdered sugar
1 tbsp espresso
For the Frosting:
1 cup mascarpone cheese
1 cup heavy whipping cream
¼ cup powdered sugar
1 tsp vanilla extract
For Garnish:
Cocoa powder, for dusting
Chocolate shavings (optional)
Instructions:
Preheat Oven & Prepare Pan
Preheat oven to 350°F (175°C).
Line a cupcake tin with liners.
Make the Cupcakes
In a bowl, whisk flour, baking powder, and salt.
In a separate bowl, beat butter and sugar until light and fluffy.
Add eggs one at a time, then mix in vanilla.
Alternately mix in dry ingredients and milk, ending with dry ingredients.
Stir in brewed espresso.
Divide batter into cupcake liners and bake for 18-20 minutes or until a toothpick comes out clean.
Let cupcakes cool completely.
Prepare the Filling
Mix mascarpone, powdered sugar, and espresso until smooth.
Cut out a small hole in each cupcake and fill with the mascarpone mixture.
Make the Frosting
Beat mascarpone, heavy cream, powdered sugar, and vanilla until fluffy and spreadable.
Assemble & Decorate
Pipe the frosting onto cupcakes.
Dust with cocoa powder and top with chocolate shavings if desired.
