Loaded Baked Potato & Chicken Casserole
Ingredients:
4 large potatoes, baked
2 cups cooked chicken, shredded
1 cup sour cream
1 cup cheddar cheese, shredded
1/2 cup green onions, chopped
1/2 cup bacon bits
Salt and pepper to taste
1 cup milk
Directions:
Preheat the oven to 350°F (175°C). Scoop out the insides of the baked potatoes and place them in a large bowl. Mash the potatoes with sour cream, milk, salt, and pepper until smooth. Stir in the cooked chicken, half of the cheese, green onions, and bacon bits. Transfer the mixture to a greased casserole dish. Top with the remaining cheese. Bake in the preheated oven for 30 minutes, until heated through and cheese is bubbly.
