Bacon Cauliflower Salad 🥓🥦🧀✨
**Ingredients: (Serves 4)
- 6 slices bacon, cooked and crumbled
- 2 cups cauliflower florets, chopped
- 1 cup fresh corn kernels
- ½ cup red onion, finely chopped
- ½ cup mayonnaise
- 1 tbsp sugar
- Salt & pepper to taste
- 2 tbsp apple cider vinegar
- ½ cup cheddar cheese, shredded
- ½ cup sour cream or Greek yogurt
**Instructions:
1. Prepare the cauliflower: Lightly steam or blanch the cauliflower for a tender texture, then let it cool.
2. Make the dressing: In a bowl, whisk together mayonnaise, sour cream (or Greek yogurt), apple cider vinegar, sugar, salt, and pepper.
3. Assemble the salad: In a large bowl, combine cauliflower, corn, red onion, bacon, and cheddar cheese.
4. Toss with dressing until evenly coated.
5. Chill for 15–20 minutes before serving for the best flavor.
