🥙 I made these Greek Chicken Gyros with Cucumber Tzatziki, and they were fresh, flavorful, and perfect for an easy lunch or dinner!
🛒 Ingredients:
For the Chicken Marinade:
1 ½ lbs boneless, skinless chicken thighs
3 tbsp olive oil
Juice of 1 lemon
3 cloves garlic, minced
1 tbsp red wine vinegar
1 tbsp Greek yogurt
1 tbsp dried oregano
Salt and pepper to taste
For the Tzatziki Sauce:
1 cup Greek yogurt
½ cucumber, grated and drained
1 clove garlic, minced
1 tbsp lemon juice
1 tbsp chopped fresh dill
Salt to taste
For Serving:
4–6 pita breads
Sliced tomatoes, red onion, lettuce
👩🍳 Directions:
Marinate the Chicken:
Whisk all marinade ingredients in a bowl. Add chicken, toss to coat, cover and marinate for at least 1 hour (or overnight).
Cook the Chicken:
Grill or pan-fry marinated chicken over medium-high heat for 5–6 minutes per side, until cooked through. Slice into strips.
Make the Tzatziki:
Combine all tzatziki ingredients in a bowl and chill until ready to use.
Assemble Gyros:
Warm pita bread, fill with sliced chicken, toppings, and a generous dollop of tzatziki sauce.
