½ cup granulated sugar
1 ½ tablespoons ground cinnamon
Instructions
Step 1: Prepare the Dough
In a large mixing bowl, whisk together the cake flour, baking powder, salt, and sugar.
Add the milk and melted butter, stirring until a soft, pliable dough forms. Knead gently on a lightly floured surface for 1–2 minutes until smooth.
Divide the dough into small, equal-sized portions (about 1 tablespoon each) and roll them into balls. Set aside on a plate while you heat the oil.
Step 2: Fry the Doughnuts
Heat vegetable oil in a deep pan or pot over medium heat until it reaches 350°F (175°C). To test, drop a small piece of dough into the oil—it should sizzle and float to the top.
Carefully fry the dough balls in batches, turning occasionally, until golden brown and cooked through (about 2–3 minutes per batch). Avoid overcrowding the pan to ensure even cooking.
Use a slotted spoon to transfer the fried doughnuts to a paper towel-lined plate to drain excess oil. Allow them to cool slightly before filling.
Step 3: Make the Filling
In a small bowl, combine the condensed milk, custard, and optional cinnamon. Mix until smooth and creamy. Transfer the mixture to a piping bag fitted with a small round tip.
Step 4: Assemble and Coat
Once the doughnuts are cool enough to handle, use a skewer or the back of a chopstick to create a small hole in the side of each puff. Pipe the condensed milk-custard filling into the center until slightly plump.
