📝 Ingredients:
For the cupcakes:
1 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup sour cream
1/2 cup fresh orange juice
Zest of 1 orange
1/2 cup dried cranberries, chopped
1/2 cup white chocolate chips
For the frosting:
1/2 cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
1-2 tbsp fresh orange juice
1/4 cup white chocolate chips, melted
👩🍳 Instructions:
🔥 Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
🍋 In a bowl, whisk together flour, baking powder, baking soda, and salt.
🧁 In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then stir in vanilla, orange juice, and zest.
🍶 Alternate adding the dry ingredients and sour cream to the butter mixture, beginning and ending with dry ingredients.
🍒 Gently fold in chopped cranberries and white chocolate chips.
🧁 Divide batter evenly among muffin cups and bake for 18–20 minutes, or until a toothpick comes out clean. Let cool.
🍊 For the frosting: Beat butter and powdered sugar until smooth. Stir in vanilla and orange juice. Add melted white chocolate and beat until creamy.
🎂 Frost cooled cupcakes with the orange white chocolate frosting and top with extra cranberries or white chocolate chips if desired.
