🍑 Peach Cobbler Cookies 🍪
Little bites of spring sunshine—soft, chewy cookies bursting with peachy goodness and warm cobbler spices!
Ingredients:
1 cup unsalted butter, softened
1 cup brown sugar
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 ¾ cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
¼ tsp nutmeg
½ tsp salt
1 ½ cups diced canned or fresh peaches (well-drained)
1 cup white chocolate chips (optional but delish!)
Crumble topping:
¼ cup flour
2 tbsp sugar
2 tbsp cold butter
Instructions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Make the crumble topping: Combine flour and sugar in a bowl. Cut in butter until crumbly. Chill while you prep the cookies.
Cream the butter and sugars until light and fluffy (about 2-3 minutes).
Add eggs one at a time, mixing well. Stir in vanilla.
Whisk dry ingredients in a separate bowl: flour, baking soda, cinnamon, nutmeg, salt. Gradually mix into the wet ingredients.
Fold in peaches and white chocolate chips (if using).
Scoop dough onto baking sheet (about 2 tbsp per cookie). Flatten slightly and top with a pinch of crumble topping.
Bake 12–14 minutes or until edges are golden. Cool on the tray for 5 minutes, then transfer to a wire rack.
